2 Minute Vegan Chili

So hold your horses you little horsey holder. This may not be exactly two minutes but it is the easiest chili recipe ever and I created it all by myself. I know I know. Genius. This is accidentally vegan, but I don't hate when I can avoid handling or cooking raw meat. Something you might not know about me is that I hate cooking with meat. It's dirty and complicated and soooo touchy for a novice chef much like myself. Undercooked, overcooked, over seasoned, too raw, too dry etc.... exhausting.

That's where my crock pot chili comes in and it's a recipe Milo even enjoys. #toddlerapproved So not only is this recipe extremely simple, it's one any skill level in the kitchen can master. It also holds up well for leftovers and freezing if you are meal prepping or storing winter meals. What you'll need is obviously a crock pot and a can opener. That's basically it. Simple right?

I love crock pot meals because they are so easy to just prep and wait. Ideal for busy moms, days full of errands or activities, work days, weekends, and so many options for party dishes. The wide world of the crock pot is limitless, and I am here for it.
